Sunday Dinners

Crock Pot Pork Chops
6 Pork chops (Use more or less depending on the size of your family)
4 C. Applesauce
Place Pork chops in crock pot and pour applesauce over top. Cook on low about 6 hours. 
 

Crock Pot Roast
1 4-5 lb. beef roast, any cut
4-5 potatoes cut in quarters or sixths depending on size
8-10 carrots sliced in 1/2 to 1 inch slices
1/2 onion cut in fourths, then separate the rings.
1 package onion soup mix
1/2 c. water
Place chopped vegetables in bottom of crock pot. Sprinkle meat liberally with soup mix on all sides. Place meat on top of vegetables. Pour water over everything. Cook on low for about 8 hours, or high for 4 hours. 
 

Lasagna

1 lb. Ground beef

Salt and pepper

1 onion

10-12 uncooked lasagna noodles

1 can (14 1/2 oz) crushed tomatoes

2 C. cottage cheese

1 can tomato paste

¼ C. parmesan cheese

1 can tomato sauce

1 C. mozzarella cheese

1 beef bouillon cube

1 egg, beaten

1 clove garlic, minced

1 T. parsley

1 t. basil

 Brown ground beef and onion.  Add tomatoes, bouillon cube, minced garlic and seasonings. Cook over medium low heat, covered, for about 20 minutes.  For sauce, mix together cottage cheese, Parmesan cheese and ½ C. mozzarella.  Add egg and parsley to make filling.   Layer meat sauce, lasagna noodles and cheese sauce in casserole dish. Repeat layers and sprinkle top with remaining cheese. Bake at 400 degrees for about 20 minutes.


Meatloaf 

2 lbs hamburger

1 C. oatmeal

1/4 C. onion, chopped

1/4 C. green pepper, diced

1/2 t. salt

1/4 t. pepper

2 eggs

2 C. tomato sauce 

Combine all ingredients except 1 C. tomato sauce; mix well. Place in loaf pan and bake at 350 degrees for 60 minutes; pour remaining 1 C. tomato sauce over loaf and bake 30 minutes longer.

Variation: mix 1 can cream of mushroom soup with meat instead of tomato sauce, bake 1 1/2 hours.

Serve with mashed potatoes and vegetables.


Shepherd's Pie 

4 Potatoes, peeled and chunked

1 1/2 T. butter

3 T. milk

1 1/2 lbs ground beef

1 onion, chopped

1/2 package frozen vegetables

1 jar chili sauce (or gravy mix and water.)

1/2 C. cheese

Boil potatoes until tender.  Drain, mash, and then add butter and milk while stirring vigorously until creamy smooth. In a large skillet, cook beef and onion on medium-high heat until onion is softened and meat starts to brown; drain.  Add chili sauce (or gravy) and vegetables. Grease casserole and spoon meat mixture into it.  Add potatoes and sprinkle with cheese. Bake at 350 degrees for 20-25 minutes.
