Apple Pancakes

1 apple, peeled, cored and diced

1 c. flour

1/2 c. sugar

3 eggs

1/2 c. milk

1 c. butter, melted

2 t. cinnamon
pinch salt

Mix all ingredients except apples in bowl until smooth.  Stir in apples. Spoon onto griddle and cook over medium heat until bottom is brown, flip and cook other side. Serve hot.


Eggitos

5 eggs

1 T. butter

1 c. cheese

Salsa (optional)

Salt and pepper

tortillas

Melt butter in skillet; add eggs and scramble.  Stir in cheese, salsa, salt and pepper, and cook, stirring, until eggs are set.  Warm tortillas and fill with eggs.  Roll and eat!


French Toast

3 eggs

2 T. milk

Dash cinnamon

1 T. sugar

Dash nutmeg

8 slices bread

Mix together all ingredients except bread.  Heat greased frying pan.  Dip slices of bread in egg mixture, scraping sides against side of bowl, then place on pan.  Cook until brown and flip.


Granola

1 C. brown sugar

1 1/2 C. powdered oatmeal

6 1/2 C. oats

1 t. salt

1 t. cinnamon

1/2 C. melted butter

3/4 C. honey

2 C. raisins

Mix dry ingredients in a very large bowl. Mix melted butter and honey together, then add to dry ingredients, stirring well. Bake on cookie sheets at 325 degrees for 20 to 25 minutes, stirring every 5 to 10 minutes. Add raisins after baking. 


Muffins

1 3/4 c. flour 
1/3 c. sugar
2 t. baking powder
1/4 t. salt
1 egg
3/4 c. milk
1/4c. oil
Mix dry ingredients well, make a hole in the center and set aside. Combine remaining ingredients and pour all at once into the dry mixture. Stir just until moistened. Spoon into greased muffin cups and bake at 400 degrees for 20 minutes. Let cool 5 minutes before removing from pan. 

Blueberry:  gently stir in blueberries and grated orange peel with the egg mixture.
Apple Cinnamon: add 1 T. cinnamon with dry ingredients, stir 1 diced apple in with eggs.
Double Chocolate: add 2 T. cocoa powder with dry ingredients, stir in 1/2 c. chocolate chips.
Oatmeal:  reduce flour to 1 1/3 c., and add 3/4 c. oatmeal to dry mixture.
Surprise: spoon half batter into cups, then drop 1 tsp jam into each muffin and top with remaining batter.


Raisin Spice Oatmeal 

2 C. quick cooking oatmeal, powdered

4 C. quick cooking oatmeal

1 C. sugar

1 T. cinnamon

1 t. nutmeg

½ t. salt

1 C. raisins

Hot water

Combine all ingredients except water in a bowl with a tight lid.  Put lid on and shake.  When ready to serve, spoon powdered mix into bowl and add hot water until desired consistency.


Puffed Pancake

1-2 T. butter

3 eggs

1/2 C. flour

1/2 C. milk

1/4 t. salt

Melt butter in 10" cake pan in 400-degree oven. Beat eggs until well blended.  Stir in flour, milk and salt.  Mix well.  Pour immediately into hot pan. Bake 20-25 minutes until puffed and brown.  Serve with fruit, syrup, powdered sugar, or whatever.
