Cinnamon Rolls

1 C. butter

2 t. salt

1 1/2 C. milk

cinnamon

1/2 C. sugar

sugar

1/2 c. hot water

raisins

6 c. flour

1 C. powdered sugar

2 eggs

1 T. milk

2 T. yeast

1 t. cinnamon

Microwave 1/2 c. butter, milk, sugar and hot water on high for 4 minutes. Mix together, then add 3 C. flour. Add eggs, yeast and salt, then mix with dough hooks. Gradually mix in remaining flour until a soft dough forms. Roll into long rectangle. Spread with remaining butter, sprinkle with sugar, cinnamon and raisins. Let rise 45 minutes, then bake at 375 degrees for 10-12 minutes. Mix powdered sugar with just enough milk to make a thin icing. Stir in cinnamon, and drizzle over warm cinnamon rolls.


Honey Oatmeal Bread

2 T. yeast

1 3/4 T. salt

1/2 c. hot water

3/4 c. honey

1 1/2 c. quick oats

10 c. flour (more or less)

3 c. water

1 egg white, beaten

1/3 c. butter, melted

In a small bowl, mix yeast and water and let stand five minutes. In a large mixing bowl combine oats, water, butter, salt and honey. Add yeast mixture and mix well. Add flour gradually and mix until dough pulls away from sides of bowl. Cover and let rise until double, about 1 hour. Turn dough onto lightly floured surface and knead until smooth. Divide dough into four parts. Shape each part into a loaf and place in a greased 9"x5"x3" loaf pan. Let rise again until pans are 2/3 full, about 1 hour. Brush tops with beaten egg white and sprinkle with oats. Bake at 325 degrees for 35 minutes.

Note: This recipe makes four loaves, which may seem like a lot, but they are so delicious they really disappear fast! I frequently give this bread to friends. They love it too!


Pizza Dough

10-11 oz. Water

3/4 t. salt

3 T. oil

4 C. flour

2 t. yeast

Combine water, salt, oil, flour and yeast in bread maker. Run dough setting. Remove from bread maker and divide dough in half.  Spread each half of dough onto greased pizza pan. Add whatever toppings as desired. Bake 15-20 minutes at 400 degrees.
